Vous devez veiller \u00e0 \u00e9viter tout contact de la peau avec le produit. Avec notre m\u00e9thode, vous n&rsquo;avez pas besoin de beaucoup d&rsquo;ustensiles : quelques bouteilles en verre, un autocuiseur, une cuill\u00e8re \u00e0 caf\u00e9 et un peu de d&rsquo;aluminium. En outre, vous avez besoin d&rsquo;un espace o\u00f9 vous pouvez maintenir la temp\u00e9rature \u00e0 environ 40\u00b0C.<\/p>\n<p>1. Pour faire 1 kg de natto, il faut 500 g de graines de soja enti\u00e8res (plus elles sont petites, mieux c&rsquo;est) et 1 g de starter de natto.<\/p>\n<p>2. Lavez les graines de soja et faites-les tremper dans environ 2 litres d&rsquo;eau pendant environ 12 heures. Il est important que les graines ne deviennent pas acides pendant ce processus de trempage. La bact\u00e9rie Bacillus natto n&rsquo;aime pas les conditions acides. Si la temp\u00e9rature ambiante est \u00e9lev\u00e9e, il est pr\u00e9f\u00e9rable de faire tremper les graines de soja dans le r\u00e9frig\u00e9rateur.<\/p>\n<figure id=\"attachment_3805\" aria-describedby=\"caption-attachment-3805\" style=\"width: 300px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-3805 size-medium\" src=\"https:\/\/www.topcultures.com\/wp-content\/uploads\/soaking-300x200.jpg\" alt=\"Soaked soybeans\" width=\"300\" height=\"200\"><figcaption id=\"caption-attachment-3805\" class=\"wp-caption-text\">Soja tremp\u00e9<\/figcaption><\/figure>\n<p>3. \u00c9gouttez les graines de soja tremp\u00e9es et r\u00e9partissez-les dans 5 bouteilles en verre (1 litre \u00e0 col large, par exemple des bouteilles de jus de fruits). Elles seront remplies d&rsquo;environ 1\/3. Ajoutez 1 cuill\u00e8re \u00e0 caf\u00e9 d&rsquo;eau suppl\u00e9mentaire dans chaque bouteille. Couvrez la bouteille d&rsquo;une premi\u00e8re couche de papier d&rsquo;aluminium. Faites environ 6 \u00e0 8 trous dans la feuille d&rsquo;aluminium avec un cure-dent. Recouvrez d&rsquo;une deuxi\u00e8me couche de papier d&rsquo;aluminium intacte. Placez la cuill\u00e8re \u00e0 caf\u00e9 et les bouteilles avec le soja dans un grand autocuiseur, ajoutez suffisamment d&rsquo;eau dans l&rsquo;autocuiseur pour qu&rsquo;il ne cuise pas sec, et faites cuire pendant environ 60 min \u00e0 la pression maximale. Vous pouvez ajuster ce temps pour obtenir un natto plus dur (50 min) ou plus mou (80 min).<\/p>\n<figure id=\"attachment_3829\" aria-describedby=\"caption-attachment-3829\" style=\"width: 300px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-3829\" src=\"https:\/\/www.topcultures.com\/wp-content\/uploads\/pressure_cooker-300x200.jpg\" alt=\"cocotte-minute\" width=\"300\" height=\"200\"><figcaption id=\"caption-attachment-3829\" class=\"wp-caption-text\">Bouteilles dans la cocotte-minute<\/figcaption><\/figure>\n<p>5. Retirez les bouteilles et la cuill\u00e8re \u00e0 caf\u00e9 de l&rsquo;autocuiseur. Laissez refroidir pendant 8 min, les haricots seront encore tr\u00e8s chauds. Avec la cuill\u00e8re st\u00e9rilis\u00e9e, mesurez environ 0,2g de starter de natto et ajoutez-le dans chaque bouteille sur les graines de soja chaudes. Couvrez \u00e0 nouveau la bouteille avec les feuilles d&rsquo;aluminium et secouez bien les haricots. Utilisez une serviette pour prot\u00e9ger vos mains de la chaleur. Laissez les graines refroidir \u00e0 moins de 45\u00b0C. Secouez \u00e0 nouveau les haricots.<\/p>\n<p>6. Retirez la deuxi\u00e8me feuille d&rsquo;aluminium, laissez la feuille d&rsquo;aluminium avec les trous fermement sur la bouteille et fixez-la avec un \u00e9lastique. Placez les bouteilles horizontalement dans l&rsquo;incubateur r\u00e9gl\u00e9 \u00e0 40\u00b0C. Veillez \u00e0 secouer les haricots pour qu&rsquo;ils soient r\u00e9partis le plus possible. Incubez pendant 22-24 heures. Apr\u00e8s environ 8 heures de fermentation, vous devriez remarquer un l\u00e9ger duvet blanch\u00e2tre sur les graines de soja et l&rsquo;odeur typique du natto devrait \u00eatre pr\u00e9sente. Votre natto est maintenant pr\u00eat \u00e0 \u00eatre consomm\u00e9 et peut \u00eatre transf\u00e9r\u00e9 dans des tasses plus petites. Le natto peut \u00eatre vieilli au r\u00e9frig\u00e9rateur pendant quelques jours pour am\u00e9liorer le go\u00fbt et la ficelle.
